Tonight's dinner was a mish-mash of things that are low carb/low sugar and it ended up tasting amazing. It fed 3 people easily.
2 pats/packets of SAUTEE EXPRESS LEMON PEPPER (8 come in a pack)
2 chicken breasts
20 medium size shrimp
1 small pack of frozen broccoli
1 small pack of frozen artichoke hearts
3 tablespoons of cauliflower mash (see recipe below)
I cooked the chicken breasts thoroughly in the sautee express on the stove. At the same time, I cooked the broccoli and artichoke hearts (as per instructions on bag) on the stove. Once the chicken was done, I added the shrimp, broccoli and artichoke hearts into the pan. I let it all cook together for about 15 minutes.
Add fresh cauliflower (remove the leafy/green parts - stems are ok) - to boiling water and cover for about 10-15 minutes.
Drain the cauliflower and put in cuisinart (or blender - hand mixer does not work).
Add about 1/4 cup of heavy cream and 2-3 oz of butter. Blend until it is the consistency you want (generally like mashed potatoes).

** Tonight we added a few strips of fresh bacon as it was mixing - it was sooooo good!
